Happy Wednesday, friends! I hope everyone is having a great week so far!
I am feeling extra thankful, because after a week of not-so good air quality from the Sonoma fires (we live in the South Bay), things are starting to get better. It was pretty eerie driving around and seeing so much smoke. I’ve done hurricanes in New Orleans, tornadoes in Tennessee, but just in the past week I experienced my first earthquake in San Jose and smoke from wildfires! Sooo it’s been an eventful week!
But…I am here to talk about something MUCH lighter and happier, and that is BREAKFAST. Seriously, I go to bed thinking about what I am going to have for breakfast. Anyone else?! (Tell me I am not the only one!). I was on an acai bowl kick for a while, but lately I’ve switched it up to an equally delicious bowl…my peanut butter banana bowl! It’s nothing crazy, but it is super easy, filling, and yummy. AND it gives me my peanut butter fix (for the morning at least!). Plus, because you can add whatever fruits/ toppings you want, I haven’t gotten sick of it yet! I usually have pretty busy mornings, so I am all about a fast and equally delicious breakfast.
Peanut Butter Banana Bowl
* 1 1/2 frozen bananas
* 1 heaping scoop of peanut butter (or any nut butter you like)
* 1/2 cup of milk (I use vanilla almond milk!)
* Granola, fruit, coconut, or any other toppings
Blend bananas, peanut butter, and milk together with your favorite blender (I have this Ninja and it works great!). Pour the contents into a bowl and add any toppings you’d like on top. Simple as that! Or skip the toppings and have it as a smoothie 🙂
